Wheat Pizza Crust

I've used this recipe for years, but just recently (BTW I just realized the resident tech-e spelled recipe wrong, I'll have to get on him for that) used it for the grill, it worked great for that too!
  • 1 envelope (2 1/4 tsp) dry active yeast
  • 1 cup warm water (115 degrees F)
  • 2 TBS olive oil
  • 1 1/2 cup wheat flour
  • 2 tsp sugar
  • 1/2 tsp salt
  • 1 1/2 cups white flour
dissolve yeast in water, allow to rest 5 minutes.  combine wheat flour (I've backed it down to about 3/4-1 cup and used more white flour--especially for the grill) with olive oil, salt, sugar and yeast, slowly adding the white flour until a dough ball forms that sticks to itself (I kneed this in the Kitchen Aid with the dough hook--I love my kitchen aid!) then add a little more flour and kneed for about 5 minutes.  let dough rest covered in a warm spot for 15 minutes.  stretch crust to fit pizza pan (14 inch round) that has been sprayed with cooking spray.  top with your favorite toppings and then bake in a pre-heated oven at 400 degrees for about 12-15 minutes remove when cheese and edges are golden.
